A few thoughts on moving

We're at the 2 and a half week count down to moving day. For those of you haven't ever moved or haven't moved in a while that means that pretty much every thing we own is either out or taped up in a box. It also means that we're trying to eat all the food at our house with out buying more. This may be one of my favorite parts about moving. It really affords the opportunity to use ingredients in ways you might not other wise. Or make things out of season. For example, we will be taking a pumpkin cake to our church pot luck on Sunday because I don't want to move a can of pumpkin and we have some spices that need to be used up. I'm looking for lots of recipes that use pecans and walnuts because for some reason I've been stock piling them in the freezer. Other interesting ingredients that we'll be hurrying to eat in the next couple of weeks are garbanzo beans, salad dressings of many kinds, roasted red peppers, fresh frozen coconut, some pork loin and philo dough. If you know some thing yummy that uses lots of nuts or salad dressings in non-salad ways let me know.

How can you have "fresh, frozen coconut"? I can't wait to see ya'll during the move week. have a good time eating all your food!
